INGREDIENTS:

- 1 or 2 Tablespoons extra virgin olive oil - Vegetables: brocoli, snap peas, cauliflower - More veggie options: chopped fine onion, garlic, bell pepper - Chopped chives - Curry Powder - Rice One package Indian Masala "More than Tofu"

STEP-BY-STEP:

Take 1 package of the Indian Masala tofu. Slice into 1/4" slices and sautee in a frying pan until crispy on both sides. Then add nutritional yeast to coat both sides, and remove from the pan.
In the same pan, sautee any vegetables you have on hand. I used broccoli, separated and sliced, sugar snap peas(cleaned and ends removed), about 3 cups, and cauliflower, separated and sliced, in 2 tbsp. extra virgin olive oil over a medium high heat. (Optional additions, chopped fine onion, garlic and bell pepper) AsĀ vegetables start to sweat while cooking, add chopped chives and sprinkle curry powder on top. Add a little bit of water if necessary to keep things from sticking.Ā
Prepare rice in a rice cooker or on the stove top.
Serve vegetable mix over rice andĀ place tofu slices on top of the mixture two or three depending on the serving size.
This is a good way to get 3 or so vegetables in one meal and the tofu slices add the perfect touch to tie it all together.
