Tofu with Miso Gravy (serves  4)
[note: this recipe works well with several flavors of More Than Tofu]

INGREDIENTS :

MISO GRAVY
- 3  Tablespoons vegetable oil
- 3 Tablespoons white or whole-wheat flour
- 2  cups hot (but not boiling) water
- 3 Tablespoons Miso (my current favorite  for this recipe is "Red" but any of the darker ones work fine)

TOFU
- 1 Tablespoon vegetable oil
Pick one of these More than  Tofu flavors: Porcini Herb, Savory Portabella, Italian Herb, or Garlic Shiitake.

STEP-BY-STE P:

Make your gravy first by dissolving miso in hot water and put mixture aside. Immediately, Heat up oil on Medium-high flame. (Its important that the miso mixture not get cool; as with any gravy or sauce, the liquid must be hot when  added to the hot rue to make it firm up correctly). Once hot, add flour and mix  thoroughly. After that mixture is good and hot, add in your miso and water  mixture. Stir frequently until it's gravy consistency. Should happen in less  than 5 minutes. Turn off heat and put on pot lid to keep it warm.

Now  heat up oil in large skillet. Slice the ‘More than Tofu’ into 1/2" slices and  brown on each side in the heated oil. Serve with gravy.
