Peanut & Ginger Tofu Noodle Salad

INGREDIENTS:

- 2/3 cup creamy peanut  butter
- 1 Tablespoon sesame oil
- 1/3 cup vinegar (rice or red wine)
-  2 Tablespoons Tamari or Soy Sauce
- 1/2 Tablespoon sugar
- 1/2 cup canola oil
- 1 pound pasta or spaghetti, cooked and cooled per package directions
- 1-2 Tablespoons vegetable oil
- 2 Tablespoons chopped fresh  cilantro
One package Peanut & Ginger More than Tofu, cubed

STEP-BY-STEP:

In a bowl or food processor, mix together the peanut butter, sesame oil, vinegar, Tamari (or soy sauce), and sugar until smooth. Add canola oil. In a  large bowl, toss together pasta with dressing.

In a large skillet, heat vegetable oil and brown cubed Peanut & Ginger  More than Tofu. Once browned, add tofu to the pasta and mix in. Garnish with chopped cilantro. Serve chilled.
