Sunergia Collard Bundles

1 pkg. Sunergia More Than Tofu (Garlic Shiitake, Italian Herb work well)
1/4 cup (or more) soy mayo
1/2 tsp. (or more) herb seasoning
3/4 cup chopped celery
3 Tblsp. chopped dill pickle
Organic collard leaves, steamed
Opt: green scallion stems
In food processor, pulse tofu with remaining ingredients except collards. Drain leaves on paper towel. Shave the center bony rib of each leaf horizontally so that it will roll with ease. Place about 2 Tblsp. tofu mixture at bottom of collard leaf. Make one full roll, then tuck in sides, and continue to roll. For fancy presentation, steam green scallions stems and use one to "tie" each bundle. Makes about 24 bundles.
