STEP-BY-STEP:

Heat oil in a large skillet. Saute onions until translucent. Add red pepper pieces and saute for 1 minute. Move onions and pepper to sides of skillet, add a bit more oil to center of skillet, if needed, and brown the tofu. Once tofu is browned, mix tofu and vegetables and serve over your grain of choice.
Another idea: Jon say, "Last night we had Garlic Shiitake tofu with sauteed Zucchini - the soft moist zuke's were a great contrast to the firm tofu, and the flavors went great together. Marsha sauteed the tofu in our cast iron skillet, and the zucchini in a bit of olive oil some diced onions in a covered wok. Simple and delicious."
