Sunergia Soy Feta Greek Salad
Our delicious soy fetas create a wonderful salad!
Vegan and Dairy Free, lower fat and less sodium than the traditional dairy feta.
Mix:
1 package Sunergia Soy Feta, diced (Lemon Oregano or Mediteranean Herb work well - your choice)
3 Red Ripe Tomatoes, diced in chunks
1 Cucumber, seeded and diced in chunks
1 Onion, Red, sliced thin
Add to taste:
Kalamata Olives, Olive Oil, Crushed Oregano Leaf, Sea Salt
Optional Variations:
Lettuces, Herbs - not in traditional Greek Salad, however, chunky Romaine hearts would work here, or strong
flavored herbs like watercress, fresh parsley leaf, arugula, basil leaf, radicchio, endive, etc.
Red and Green Bell Peppers - diced in chunks, deseeded, would work well
Olives - green olives, other varieties of olives
Chile Peppers - either dried red chile flakes, or fresh chile peppers, such as Jalapeo, add a unique twist,
minced recommended (de-vein for less heat).
Red Wine Vinegar or Fresh Lemon Juice - just a teaspoon or so, another variation!
Black Pepper, Fresh Ground - to taste.
