INGREDIENTS:

- 1 or 2 Tablespoons vegetable oil - 1 medium onion, chopped - 1 medium Red Pepper, in bite size pieces - 1 big ol' Zucchini, in bite sized pieces One package Garlic Shiitake "More than Tofu" (cubed)

STEP-BY-STEP:
|
Heat oil in a large skillet. Sautee onions until translucent. Add zucchini. Add red pepper pieces and saute for 1 minute. Move onions and pepper to sides of skillet, add a bit more oil to center of skillet, if needed, and brown the tofu. Once tofu is browned, mix tofu and vegetables and serve over your grain of choice
